A PERFECT SUMMER SALAD
2 cans of “Wild Planet” Albacore Wild Tuna
1-15 OZ. can of Navy Beans rinsed & drained
1 small red bell pepper seeded & chopped small
1 cucumber peeled, seeded & chopped small
10 basil leaves stacked then rolled tightly and sliced into thin ribbons
3 tablespoons of parsley chopped small
6 mint leaves chopped coarsely,
1/4 cup of wild or baby arugula chopped coarsely.
3 tablespoons of Italian parsley chopped small
1/4 cup of fresh lemon juice,
1/4 cup extra Virgin Olive oil,
1/4 teaspoon of kosher salt.
Place the tuna in a glass bowl and use a fork to break it all up into flakey pieces.
Add the rest of the ingredients into a glass bowl and mix well! Cover with plastic wrap and chill for an hour before serving.
