At the end of the week, I’m left with fruits and vegetables that we didn’t eat, they look so sad and unappetizing. I don’t like to throw food or money out the door so I have to do makeovers and turn them into something yummy! That’s what I did

with my overripe tomatoes and a bag of frozen peas!  I made a Bruschetta appetizer that you can enjoy on crostini, grilled sourdough bread, or toasted baguette. Add a French Brie and a lovely glass of white wine and it’s a start to a beautiful evening! ! OR………….  You can make a delicious bowl of pasta with fresh tomato sauce!

“BRUSCHETTA AND CROSTINI APPETIZER” 

    For the Bruschetta

serves 2-4 

4  tomatoes

4 tablespoons of extra virgin olive oil

2 garlic cloves, peeled and smashed

1 tablespoon of Italian parsley chopped coarsely

1/2 teaspoon of kosher salt

INSTRUCTIONS

Quarter the tomatoes and remove the ribs and seeds, discard. Chop the tomatoes into small pieces, add the olive oil, smashed garlic parsley, salt, mix well

Cover and let sit for an hour for the flavors to bloom! Serve over, grilled sourdough bread, sliced baguette, or crostini

   “FRESH TOMATO WITH PASTA & PETITE PEAS”

 

 

6 OZ. of Farfalle Pasta

4 tablespoons extra virgin olive oil

2 garlic cloves, peeled and smashed

3 scallions chopped small

1/3 cup dry white wine

1/2 teaspoon kosher salt

1/4 cup frozen peas

4 basil leaves rolled tightly on top of each other and sliced thin, (chiffonade)

1/4 cup Reggiano Parmesan cheese

1/4 cup Romano cheese

INSTRUCTIONS

pre-heat oven to 250

Add pasta bowls in the oven to warm

Cook the pasta according to package direction. Drain, rinse and set aside

Quarter the tomatoes and remove the ribs and seeds, discard

Chop the tomatoes into small pieces

In a saucepan on medium heat add the olive oil, garlic, and scallions, cook for 8 to 10 minutes

Add white wine and cook down for 3 minutes

Add the tomatoes and salt

Cook for 10 to 15 minutes so the sauce isn’t runny

Add the cooked pasta into the tomatoes and heat through for about 3 to 4 minutes to get the pasta hot

Serve in heated bowls
