ROASTED CHICKEN WRAPS WITH BLACK BEAN SALSA, ARUGULA, AND AVOCADO SPREAD!

Swap out mayonnaise high in fat and calories, with heart healthy avocado spread! High protein, low fat chicken wraps! Perfect for lunch, dinner, and parties!!!
Most of us don’t have the time to roast a chicken so I reach for the organic roasted chicken at my health food super market. Some regular markets will carry organic chicken, check with the manager. You want to make sure you are not eating chicken that
has additives and pumped full of salt, sugar and preservatives. This wrap is full of flavor, filled with heart and brain healthy ingredients and contains power packed protein, vitamins, minerals and anti-oxidants.

INGREDIENTS

Serves 6
Pre-heat oven to 250F.
Bean Salsa, link to recipe below
6 whole wheat flour tortillas
2 medium ripe avocados
3/4  teaspoon kosher salt
3 tablespoons fresh lemon or lime juice
2 roasted chicken breasts, diced into 1/2″ cubes
5 cups wild or baby arugula

INSTRUCTIONS

Pre-heat oven to 250F.
Make the Bean Salsa, and avocado spread first

AVOCADO SPREAD; In a small bowl add the peeled and pitted avocados, salt and lime. Mash with a potato masher vigorously until the avocado is whipped.

Heart Healthy Salsa

Protein packed Black Bean Salsa with Roasted Corn

Keep the black bean salsa and avocado spread covered in the refrigerator until you’re ready to assemble the wraps.
Wrap the tortillas in foil and heat in the oven for 15 minutes. Turn off the oven, but leave the tortillas in oven to keep them warm until your are ready to assemble the wrap.

TO ASSEMBLE

Remove 1 tortilla from the foil pack, and place on a cutting  board.  Keep the remaining tortillas covered.
Spread 2 generous tablespoons of avocado spread over the entire tortilla.
Add 1/4 cup of diced chicken to the bottom third of the tortilla.
Place 3 tablespoons bean salsa and 1/2 cup loosely packed arugula over chicken
Roll the tortilla over once tightly then fold the sides in tightly. Roll into a burrito. With the seam side down, slice with a shape knife on the diagonal.
Serve!
