Dad will love this cool, crisp salad for Father’s Day! It’s the perfect salad to serve with grilled organic chicken and grass-fed organic, burgers, and pasta!
2 large organic head lettuce sliced into quarters rinsed in cold water. Drain on paper towels, pat dry.
4 organic summer ripe tomatoes sliced thin
1-1/2 cups chunks of blue cheese
1 small red onion shaved thin
1/3 cup fresh chives chopped small
12 fresh basil leaves stacked on top of each other rolled tightly then sliced thin
HOMEMADE BLUE CHEESE DRESSING!
Makes 1-1/2 cups
1- 1/3 cup buttermilk
2 cup low-fat sour cream
4 Tablespoons champagne vinegar
4 Tablespoons fresh lemon juice
8 to 10 ounces of really good blue cheese
1/8-teaspoon cayenne pepper
1 teaspoon kosher salt
Whisk together the buttermilk and sour cream until smooth. Add the vinegar, lemon juice, cayenne, salt, and whisk. Break the blue cheese into pieces and fold into the buttermilk mixture. Mix gently.
Store in the refrigerator in an airtight glass container. This dressing will keep in the refrigerator for 3 days.
Slice the tomatoes thin and line a platter with them. Place the wedges over the tomatoes and add 3 to 4 tablespoons of blue cheese dressing over the top. Garnish with onions, chives, and basil.
