You should always wait for the last minute before you eat to dress the salad. Salads should be served cold, crisp, and eaten immediately so they don’t have a chance to wilt!
RASPBERRY VINAIGRETTE, CREAMY SHALLOT VINAIGRETTE, SIMPLY LEMON!

RASPBERRY VINAIGRETTE
Makes ¾ cups
INGREDIENTS
½ cup extra virgin olive oil
2 Tablespoons walnut oil
2 teaspoons finely chopped shallots
2 Tablespoons seasoned rice wine vinegar
1-Tablespoon malt vinegar
4 Tablespoons raspberry vinegar
1/2 teaspoon kosher salt
1/8 teaspoon ground black pepper
INSTRUCTIONS
In a glass bowl, combine all of the ingredients and whisk together well. Store in an airtight container in the refrigerator. Vinaigrette will keep up to 3 days.
CREAMY SHALLOT VINAIGRETTE
INGREDIENTS
1 tablespoon Dijon mustard
¾ cup extra virgin olive oil
1-tablespoon shallots, minced
3 tablespoons Champagne vinegar
2 tablespoons fresh lemon juice
1/2-teaspoon kosher salt
INSTRUCTIONS
In a bowl add Dijon mustard using a whisk drizzle olive oil slowly to emulsify.
Add shallots champagne vinegar, lemon juice, and salt. Whisk to blend all the ingredients until smooth and creamy.
This is a lovely dressing for salads that are tender such as Butter Lettuce, baby greens, arugula, and tomatoes.
SIMPLE LEMON VINAIGRETTE
INGREDIENTS
¾ cups extra virgin olive
1/3-cup fresh lemon juice
½ teaspoon kosher salt
½ teaspoon cracked pepper
½ teaspoon ground cumin (OPTIONAL)
2 teaspoons organic honey
INSTRUCTIONS
Place all of the ingredients in a mason jar, screw tightly with a lid and shake vigorously to combine.
