Super simple to make, delicious to eat, and healthy for the gut. Below is my recipe for Pasta Broccoli. A dish my family has loved for years and got the kids to eat their vegetables!
4 TO 6 SERVINGS
1/3 cup + 2 tablespoons extra-virgin olive oil
2 garlic cloves peeled, sliced
2 heads organic broccoli, cut into medium-size florets, approximately 6 cups
8 cups of water
1 tablespoon kosher salt
4 cups of ice
8 ounces of your favorite pasta I use DeChecco Pasta, for this dish I like their shells or Farfalle
1/2 teaspoon red pepper flakes
Cracked pepper if desired
1 cup shaved or 1/2 cup freshly grated Parmesan cheese, and then some:)
2 tablespoons extra virgin olive oil to drizzle
1 lemon, cut into wedges
Heat a heavy saucepot until hot. Add olive oil and garlic slices. Sauté until golden then remove from the heat and set aside.
Boil the broccoli in salted water for 3 minutes until crisp-tender. If you like a softer texture, you can boil it for another 2 minutes. I like mine Al dente ( a slight crispness in the middle on the inside) so 3 minutes is good for me.
Drain into a colander. It’s best to submerge the cooked broccoli into a bowl of ice water immediately. This will help stop the cooking process and ensures the crisp texture along with the bright green color.
Drain well shaking off excess water and dabbing with a paper towel. Place the broccoli in a serving bowl. and pour the sautéed garlic and olive oil over and mix together gently being careful not to break up the florets and set aside
Place the pasta and broccoli into a bowl, and garnish with red pepper flakes, cracked pepper, lots of freshly grated Parmesan cheese. Drizzle 2 tablespoons of extra virgin olive oil over. Serve with lemon wedges to squeeze over pasta.
