This is one of my favorite sauces to make and eat! It’s simple, light and takes only10 minutes to cook! 🙂 This is one of the first recipes I ever taught my kids. The perfect recipe for last-minute guest or late dinner request.
10 Minute Pasta: Last Minute Pasta Sauce
8 ounces of Farfalle or Penne Pasta
1-1/2 tablespoons table salt
1 tablespoon extra-virgin olive oil
¼ cup extra virgin olive oil
2 scallions, chopped small
2 small cloves of garlic peeled and smashed
1 teaspoon red pepper flakes
½ cup dry white wine
4 cups of organic baby Roma tomatoes sliced lengthwise top to bottom or cherry tomatoes sliced in half in the middle
1-teaspoon kosher salt
¼ cup Italian parsley loosely packed, rough chop
6 basil leaves, rough chop
1 cup freshly grated Parmesan cheese
8 leaves of basil rolled tightly and sliced thin
12 Black olives
In a saucepan heat ¼ cup olive oil for 1 minute on medium-high heat. Add scallions, garlic, and red pepper flakes, sauté for 2 minutes then add the wine and cook down by half.
Add tomatoes, salt and mix well. Cook 2 to 3 minutes shaking the pan back and forth to heat the tomatoes through. Add your favorite pasta cooked al dente*. Turn the heat up under the skillet for 1 minute to heat through. Pour into large pasta bowl and garnish with fresh basil, olives, and Parmesan cheese.
