DON’T STRESS EAT DURING TIME OF CORONAVIRUS! HEALTHY “SOOTHIE” RECIPE, FROZEN COCONUT CREAM PIE”!

In this time of quarantine due to the stress of the coronavirus, most people start to crave sweets to help calm them. Why is that? What is the psychological basis for sugar craving during times of stress?  A recent study by researchers proposed sugar turns down the stress response in the human brain.  The result is we may be consuming sugar as a quick way to hold back feelings of stress. So before you reach for that doughnut, piece of cake, a slice of pie, ice cream sundae try this, SOOTHIE, yes I said SOOTHIE, because you will be using ingredients that will satisfy your sugar craving naturally without raising your sugar level and help  “soothe” your levels of stress.

 HEALTHY SMOOTHIE RECIPE COLD COCONUT CREAM PIE
Instead of a sugar-laden, high calorie, a high-fat piece of pie try a dairy-free Coconut Cream Pie in a glass. Nothing better than the combination of peanut butter, bananas, coconut, and chocolate!

INGREDIENTS

SERVES 2
2- 6-ounce drinking glasses chilled in the refrigerator for 1 hour
2 cups Coconut Bliss dairy-free Coconut milk
6 ice cubes
¼ cup organic smooth peanut butter
1 vanilla bean split open seeds scraped and placed in a blender
¼ teaspoon ground cinnamon
Organic Dark Chocolate syrup for drizzle
1 large banana1 cup So Delicious Coconut non-dairy whipped cream

2 CUPS UNSWEETENED COCONUT FLAKES TOASTED

Pre-heat oven 325 F.

Place the unsweetened coconut flakes on a baking sheet, shake back and forth to flatten evenly. Bake until coconuts turn golden brown, approx. 6 to 8 minutes. Check after 4 minutes just to make sure they are not turning too quickly. Do not walk away, watch carefully as they will quickly turn and burn. Remove when golden and toasty from oven and set aside to cool.

Extra toasted coconut flakes will store nicely in a tightly closed Mason Jar for up to 2 weeks. You can sprinkle them over salads, use in smoothies, topping for oatmeal, curry, and Asian infused soups!

INSTRUCTIONS

In a blender add Coconut Bliss Coconut Milk, ice cubes, peanut butter, vanilla beans, cinnamon. Process for 30 seconds until creamy smooth.
When ready to serve, remove glasses from the freezer.
Drizzle small amounts of chocolate sauce on the bottom and sides of both glasses. Add the mixture ¾ of the way up both glasses evenly.
Peel banana, slice ¼” thick and push 4 to 5 slices into the sides of each glass so you can see them.
Add 1/2 cup of the coconut whipped cream in each glass, drizzle chocolate sauce over top.
