PEANUT BUTTER AMAZEBALLS!

I am an insane lover of peanut butter and chocolate. The ratio of chocolate to peanut butter in these bite-size morsels is perfect. It has pure natural ingredients and the right portion size. They are simply amazing, so I named them “AMAZEBALLS”!

PEANUT BUTTER AMAZEBALLS!

Yields 1 dozen or more

INGREDIENTS

1 cup 100% organic natural crunchy peanut butter

4 tablespoons pure maple syrup

¼ teaspoon kosher salt

3 tablespoons coconut flour

1 cup organic dark chocolate chips

2 teaspoons coconut oil

Edible gold leaf, available online, link below

1 cup of finely chopped walnuts or your favorite nut, (Optional)

INSTRUCTIONS

Line a baking sheet with parchment paper.

Chances are the peanut butter will have to be stirred together to incorporate the oil that has risen to the top of the jar. Scoop out the peanut butter into a bowl and mix with a whisk.

When all the oil is stirred in it is ready.

Add maple syrup, and whisk together until it is thick. Add the coconut flour and mix well, this will bind the mixture. Now you will be able to roll them into balls.

Roll into ¼ oz. balls (size of a large grape) and place them on the baking sheet. Place in the refrigerator while you make then cool the chocolate sauce.

Combine the chocolate chips and coconut oil in a double boiler and melt, whisking until smooth.  Remove from double boiler and place on the counter top. Cool for 15 minutes.

Dip the balls into the melted chocolate with a fork and turn gently to coat.

Using a fork, lift them gently and tap against the side of the bowl to let any excess chocolate run off, use a second fork to push the balls onto the parchment paper.

Continue the process until all of the balls are covered in chocolate. When all the balls are done and still wet, add several tiny pieces of the edible gold leaf.

You can also sprinkle chopped nuts over.

Place the Amazeballs in the refrigerator to firm up for 1 hour. They will keep in the refrigerator for up to a week in an air-tight container. Amazeballs are delicious served cold, frozen, or room temperature.
