HEALTHY BREAKFAST! EGGS WITH REFRIED BEANS!

Enjoy this delicious protein-packed breakfast, lunch, or dinner! For lunch or dinner, I will add a light salad of butter lettuce with fresh lemon and extra virgin olive oil dressing!
 

INGREDIENTS

makes 2 

2 tablespoons of extra virgin olive oil

4 scallions chopped small including the green part

2 garlic cloves, peeled and chopped small

2 small jalapeno peppers, one chopped into round slices for garnish, set aside. The other chopped small including seeds to add to the refried beans

1-15 OZ. can of AMY’S organic refried beans

2 tablespoons of low-fat sour cream, or plain full fat yogurt

4 tablespoons of your favorite Salsa!

2 tablespoons of cilantro chopped small

2 eggs

1 cup of Gruyere cheese sliced on the big holes of a cheese grater

1 small lime cut into quarters for garnish

DIRECTIONS

REFRIED BEANS

Heat a cast-iron skillet on medium-high heat for 30 seconds

Add the olive oil, scallions, garlic, and CHOPPED jalapenos, sautee just until the scallions and garlic start to brown on the edges, about 30 seconds.  (Be careful NOT to burn the garlic, it will turn bitter)

Add the refried beans and mix until everything is mixed together and is smooth. Cook for 3 to 5 minutes. Turn off heat and set aside while you make the gently fried eggs.

FRIED EGG

1 or 2 organic eggs

Organic olive oil, or vegetable cooking spray

Generously coat a separate skillet with organic olive oil cooking spray.  Turn the heat to low and immediately crack an egg into the pan. When the egg whites have cooked (about 1-1/2 to 2 minutes gently shake the pan back and forth to loosen the eggs completely from the pan and they freely slide back and forth. Continue to cook for 1 minute more.

ASSEMBLE

Add 1/2 cup of the refried beans into the 6″ skillet and spread to cover the bottom

Add the fried egg over the beans, add the cheese, and place it under the broiler for 30 seconds, or until the cheese is nice and melty and starts to bubble and be a bit crusty on top!  DO NOT WALK AWAY, keep your eye on it the whole time because it will turn and burn quickly!

Add the salsa, as much as you want and 1 tablespoon of the sour cream or yogurt

GARNISH with cilantro and a lime wedge!

SERVE IMMEDIATELY
