CHIA SEED PUDDING!

STRAWBERRY PUREE

Can be made the night before and stored in the refrigerator overnight for up to 3 days*

INGREDIENTS

3 cups fresh or frozen organic strawberries

2 tablespoons of pure organic maple syrup

1/2 cup fresh orange juice

DIRECTIONS

*Place the strawberries, syrup, and orange juice in a small soup pot. Bring to a slow boil for 5 minutes. Strain through a mesh strainer and discard seeds.

INGREDIENTS FOR PUDDING 

1 cup cashew milk, almond, milk, or coconut milk

4 tablespoons of chia seeds

1-1/2 tablespoons organic pure maple syrup

1 teaspoon pure vanilla extract

pinch of kosher salt (1/8 teaspoon)

INSTRUCTIONS 

Into a quart Mason jar, add the nut milk of your choice, chia seeds, syrup, vanilla, salt, and stir together and let it sit for 10 minutes then stir again.

Cover the  Maon jar and place it in the refrigerator overnight.

TO ASSEMBLE

Add your favorite fresh fruits, I used blueberries and strawberries and nuts, such as 3 to 4  walnuts, pumpkin seeds, almonds

2 tablespoons of Cocowhip whipped cream!
