We LOVE breakfast in our home and I serve up a variety of different breakfast foods during the week to start the day off right including smoothies. At least two times a week I prepare eggs and when I do I want them to be perfect or should I say my family would like for them to be perfect. Over the years of hearing, these eggs are too runny, too hard, too soft, jiggles too much, not fluffy, too fluffy, I have perfected the egg to my family’s liking. I spent three whole days in the kitchen to go over in detail the timing, technique, and ingredients to cook the perfect eggs in all the different ways to cook them. I went through literally dozens of eggs and my whole house smelled like sulfur for weeks but it was worth it in the end.

Eggs are one of the most nutritious foods available and contain your daily needed intakes of these vitamins. Vitamins A, B2, B5, B12, D, E, K, Calcium, Zinc, Folate, Phosphorus, and Selenium. One large egg is approximately 77 calories, 6 grams of protein, and 5 grams of healthy fats.

 

 

 

PERFECTLY POACHED EGGS!

PERFECTLY POACHED EGGES

Serves 4

It isn’t hard to make a perfect poached egg, just follow these easy steps

INGREDIENTS

4 organic eggs

2 tablespoon white wine vinegar

Approximately 2 to 2-1/2 cups of water

Salt

Break the eggs into a custard cup first and not directly into the boiling water.

Poach in a deep sauté pan large enough to hold 4 eggs comfortable without crowding. Make sure the water covers the eggs by 2″. Add vinegar to the water, this will help the egg whites to congeal. If you see that the yolks are peeking up over the water and you can’t add anymore without it overflowing use a large spoon to gently drizzle water over the top to help cook the tops.

Bring the water to a gentle boil, add eggs one at a time quickly, no need to swirl the water. Start your time from the first egg you poured in the first egg and remember which one! 🙂  Time, 2-1/2 minutes per egg. I like for the whites to be solid and the yolk creamy.

Always remove eggs with a slotted spoon and gently place them on paper towels to absorb excess water.
