3 ripe organic avocados, sliced open, and pits removed. Use a tablespoon to remove the avocado meat from the peel, and place it in a glass bowl along with the lemon juice
4- tablespoons organic fresh lemon juice
1/2 ripe organic mango peeled and chopped into 1/4″ pieces
2- tablespoons organic red onion, finely chopped + 3 paper-thin slices of red onion sliced on a mandoline for the garnish
1- small organic jalapeno seeds included finely chopped
1 tablespoon organic finely chopped cilantro
1/2 teaspoon of kosher salt
Place the avocados with the lemon juice into a glass bowl and mash with either a fork or potato masher. It should be chunky, not smooth
Add the rest of the ingredients, mix together gently, taste, and correct seasoning adding more salt if necessary.
Add more chopped jalapeno if you like your guacamole spicy!
If you don’t serve the guacamole right away, place an avocado pit into the guacamole to keep it from turning brown, cover and place it into the refrigerator, until ready to serve.
I personally don’t keep it in the refrigerator for more than 2 hours.
