I’ve been craving sweet potatoes lately, to be honest over the past couple of months. I’m not sure why but I actually do crave them and eat sweet potatoes at least 4 times a week. I know from my research on health and nutrition for my cookbook “Food for Thought” that sweet potatoes boost your immune system, is anti-cancer, anti-diabetic, and most important anti-inflammatory! LOOK AT THIS SWEET POTATO, IT FEEDS AND NOURISHES AN IMPORTANT ORGAN IN YOUR BODY, IT IS ALSO THE SHAPE OF THAT ORGAN!
CAN YOU GUESS WHICH ONE? IT IS YOUR PANCREAS!
CARAMELIZED SWEET POTATO
2 medium sweet potatoes sliced into thirds on an angle
3 tablespoon extra virgin olive oil
1/4 teaspoon kosher salt and cracked black pepper
1/2 cup of Greek Yogurt or sour cream, mixed until creamy and smooth
6 fresh mint leaves
2 scallion sliced thin on an angle
2 radishes sliced thin
sprinkle over a couple of small pinches kosher salt and cracked black pepper
Preheat the oven to 450 F.
Place the potatoes in a cast-iron skillet or a baking sheet and drizzle on the olive oil
Add salt and pepper and mix with your hands to make sure the potatoes are coating with the oil
Arrange the potatoes cut side down in the cast-iron skillet or on the baking sheet
Bake for 20 to 30 minutes until the potato has caramelized on the bottom
Turn over and bake to caramelize the skin
to test for doneness, insert a knife through the potato, if it goes in smoothly they are baked through
If you want to caramelize the open bottom more turn over and continue to roast until it is the color of molasses and has a candy-like coating. Keep an eye on it!
Remove the potatoes from the cast iron skillet.
